So I thought I would try the two ingredient pumpkin muffin recipe. I went to the Dollar tree and purchased one box of cake mix and one can of pumpkin pie filling. The cake mix was a yellow cake mix and based on a suggestion on another blog I follow I decided to add 3 teaspoons full of pumpkin spice to the mix as well. As an alternative you can use spiced cake mix or use pumpkin pie filling instead of the plain canned pumpkin. I think this would even be good with carrot cake and topped with cream cheese frosting. A pumpkin carrot cake…Yum! I might have to try that ;-) After baking them in silicone lined muffin tins for about 25 minutes they turned out absolutely delicious! Over all I would have to say this is a pretty good recipe for the cost of about two dollars and actually with the added pumpkin spice seasoning competes with any other pumpkin muffin that I've tasted. I don't think they would be very good however without having added the extra spice seasoning. If you give it a try be sure to let me know how they turned out in the comments below...
